Why source extra virgin olive oil from Spain
Spain is the world's largest olive oil producer: the International Olive Council forecast world production at about 3.44 million tonnes for 2025/26, and Spanish output in that campaign had reached 1.28 million tonnes by March 2026 according to AICA, the Spanish food control agency. For a wholesale buyer, that scale means three things: continuity of supply, a wide range of profiles, and transparent public price references at origin.
Spanish varieties at a glance
Most Spanish extra virgin olive oil sold wholesale is a blend or comes from a handful of major varieties. Typical profiles:
| Variety | Typical profile | Stability | Often chosen for |
|---|---|---|---|
| Picual | Intense, green, bitter and pungent notes | High | Long shelf life, cooking, blends |
| Hojiblanca | Balanced, fruity, mild bitterness | Medium | All-round retail EVOO |
| Arbequina | Mild, sweet, fruity | Lower | Raw use, markets that prefer mild oils |
| Cornicabra | Fruity, noticeable bitter and pungent notes | High | Robust profiles, blends |
Availability of a given variety depends on each harvest. The variety or blend is always stated in the offer.
How to recognise a reliable EVOO supplier
Olive oil is one of the most regulated — and most misrepresented — foods in trade. Whoever you buy from, ask for:
- The legal category written on the offer, not only on the label
- A certificate of analysis for the lot being offered, with its date
- A sample from that lot, sealed and referenced
- The harvest (campaign) the oil comes from
- The packer's food-safety certificate if you sell to retail
- A written offer with Incoterm, payment terms and validity
That is exactly what every Iberian Olive offer contains. If a supplier cannot provide it, the low price is not the whole story.
How a wholesale order works
- Request — grade, format, volume, destination and Incoterm.
- Written offer — category, origin, harvest, lot, pallet configuration, Incoterm, validity.
- Sample and analysis — from the lot on offer.
- Order confirmation — contract, payment terms, loading date.
- Bottling or loading in Spain.
- Documents and delivery — invoice, packing list, certificate of analysis, certificate of origin, transport documents.
